Kale & Sweet Potato Quinoa Bowl

Quinoa bowls are one of my favorite go to meals! They are super easy to make and are great for meal prep. Toss in a few veggies and you’re good to go. Do you know they sell these types of meals pre-made in the frozen section of most grocery stores? However, what I have found, it’s cheaper and you get more bang for your buck when you make it yourself. And guess what, it only takes about 15min to make.

Ingredients:

1- 1/2 cups quinoa

1 sweet potato 

1/2 tsp of cinnamon

1/2 tsp of vanilla

1/2 tsp of nutmeg

1/4 cup of water

2 cups of kale (chopped)

2 tbsp. of water (or vegetable broth or chicken broth)

seasoning of your choice

1 tbsp. onion

1 tbsp. Garlic

Directions:

Quinoa:

  1. Add 4 cups of water to a saucepan. Bring to boil.

  2. Once water begins to boil. Add quinoa, cover, and reduce heat from heat to medium or low temperature

  3. Allow Quinoa to simmer until water is absorbed. Remove from heat and allow to sit uncovered for 5 min. Fluff with fork

    Sweet Potato:

  4. Add oil, sweet potato, cinnamon, nutmeg, and vanilla to skillet. Mix. Add 1/4 cup of water. Covers and allow to cook on medium heat until tender.

    Kale:

  5. Add oil, onion, and garlic to skill and sauté in medium heat until translucent

  6. Add kale and 2 tbsp. of water (or vegetable broth or chicken broth) to skillet. Add seasonings, cover and allow to simmer until tender.

  7. Once kale, quinoa, and sweet potato are cooked, add to a bowl and mix the three together. Enjoy!
