Easy Avocado Soup

A few weeks ago, it was National Avocado Day and my co-worker made a delicious Avocado Soup. Once she shared a little about how easy it was to make, I knew I had to give it a try. You might be thinking, ‘we’re in the middle of summer, who wants to eat soup?’ Well this is not your average fall soup, it’s very light, refreshing, and can be served hot or cold. Not to mention, Avocado has great health benefits. Unlike chips and cheese burgers, it’s a healthy fat, making it good for the heart and weight loss goals. It will also have your hair growing and your skin glowing as well. Want to include more Avocado in your diet? This soup is such a great option and will only cost you $7 to make.

Ingredients:

  • 2 Avocados

  • 1 bag of frozen broccoli

  • Vegetable broth (32oz)

  • onion, chopped (approx 1 tbsp.)

  • bell peppers, chopped (approx. 1 tbsp)

  • cilantro (approx. 1/2 tbsp)

  • green onion (approx. 1/2 tbsp)

  • cumin (1/2 tsp)

  • olive oil (1/2 tbsp)

  • seasoning

Directions:

  1. Heat olive oil over medium heat in a sauce pan

  2. Sauté onions and bell pepper until softened and beginning to brown

  3. Add vegetable broth, broccoli, cumin, green onion, and other seasonings. Reduce heat and allow to simmer until broccoli is tender. Once tender, remove from heat

  4. Slice and remove the flesh of the avocado from its skin (outer layer).

  5. Slice the flesh into wedges and add avocado, along with cilantro to pot of broth and broccoli.

  6. Use hand blender to mix until smooth consistency.

  7. Taste for flavor.

  8. Add to a bowl and enjoy.
