CaBbage & Amaranth Soup

It’s soup season y’all! While I can eat it all year round, I love soup in the colder months. Anybody else love soup as much as me?

I think one of the main reasons, I enjoy soup so much is that you can toss all ingredients in one pot or crockpot for a few hours and VOILA you have a meal. That’s exactly what I did with this recipe. Looking for a great meal that you can cook in your crockpot/ slow cooker, while getting some other things done. Well this is the one for you.

Ingredients:

1/2 head of cabbage

About a 1/4 cup of Carrots

About a 1/2 cup kale

About a 1/4 cup of amaranth

About a 1/4 cup corn

16 oz Vegetable broth or 1 bouillon cube (+ water)

onion, garlic, and seasoning

Tools:

crock pot or slow cooker (stove top may also be used)

Directions:

  1. Chop carrots and cabbage.

  2. Add all ingredients (except kale) to crockpot and cook on low for 2 hours.

  3. Add kale and cook for 30 more min.

  4. Check periodically to ensure veggies are tender. Add additional time if needed.

  5. Enjoy
